Low-Budget Delicious and Nutritious Vegetable Cakes

This recipe is simple and affordable and makes delicious vegetable cakes. They are high in protein, good fats, and low-GI carbohydrates.

This recipe is simple and easy to prepare. It also doesn’t cost a lot of money. I’m getting my 5 a days veggies, which taste great!

Ingredients:

3 medium carrots

3 large potatoes

4 large onions

4 cloves garlic

50g fresh parsley

2 whole eggs

2 eggs whites

200g extra mature cheddar cheese

Cooking oil

Method

Peel the potatoes and carrots, then grate them in a large bowl. Next, peel and slice the onions thinly. Add them to the bowl. Next, break two eggs into a bowl. Add two egg whites. (To separate the eggs, crack them and let whites drain from the shells while the yoke remains inside the shell. After this, briskly whisk eggs until they reach a smooth consistency. Give the parsley a quick rinse under cold water. Then, use a sharp knife to chop the parsley. Be careful not to cut yourself! Cut the garlic into small pieces. Mix the egg mixture, garlic, and parsley in a bowl. Give it a good stir. Next, grate the cheddar cheese in a separate bowl. Heat a large saucepan to heat the oil. Take a small amount of the vegetable mixture and form a patty shape using your hands. The patties should be gently fried until crispy on the bottom. We’ll soon grill them. After you have fried the patties, place them on a grill. Sprinkle plenty of cheese on top. Grill the cheese until it turns golden. Serve with a simple, herby side salad. As always, make sure you drink plenty of filtered or bottled water when you eat.
